Summer Corn Salad
Ingredients
- 1 red pepper cut in small pieces
- 1 cup canned black beans rinsed and drained
- 4 ears Corn steamed and cooled
- 1 Jalapeno diced
- 1/4 cup Cilantro chopped
Cilantro Lime Vinaigrette Dressing
- 2 tbsp Cilantro chopped
- 2 tbsp fresh lime juice
- 1 tsp honey
- 1/2 tsp Dijon mustard
- 1 tbsp flax seed oil (optional)
- 2 tbsp Extra virgin olive oil
- 1/2 tsp sea salt
Instructions
- Cut corn kernels off the cob.
- Mix all salad ingredients, and in separate bowl, mix all dressing ingredients.
- Toss salad with dressing and refrigerate for 30 minutes before serving.
