Summer Corn Salad

Ingredients
  

  • 1 red pepper cut in small pieces
  • 1 cup canned black beans rinsed and drained
  • 4 ears Corn steamed and cooled
  • 1 Jalapeno diced
  • 1/4 cup Cilantro chopped

Cilantro Lime Vinaigrette Dressing

  • 2 tbsp Cilantro chopped
  • 2 tbsp fresh lime juice
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • 1 tbsp flax seed oil (optional)
  • 2 tbsp Extra virgin olive oil
  • 1/2 tsp sea salt

Instructions
 

  • Cut corn kernels off the cob.
  • Mix all salad ingredients, and in separate bowl, mix all dressing ingredients.
  • Toss salad with dressing and refrigerate for 30 minutes before serving.
