Summer Corn Salad

- 1 red pepper cut in small pieces
- 1 cup canned black beans rinsed and drained
- 4 ears Corn steamed and cooled
- 1 Jalapeno diced
- 1/4 cup Cilantro chopped
Cilantro Lime Vinaigrette Dressing
- 2 tbsp Cilantro chopped
- 2 tbsp fresh lime juice
- 1 tsp honey
- 1/2 tsp Dijon mustard
- 1 tbsp flax seed oil (optional)
- 2 tbsp Extra virgin olive oil
- 1/2 tsp sea salt
Cut corn kernels off the cob.
Mix all salad ingredients, and in separate bowl, mix all dressing ingredients.
Toss salad with dressing and refrigerate for 30 minutes before serving.
