Sesame Soba Noodles With Broccoli
Ingredients
- 1 lb Soba Noodles
- 1 tbsp Toasted Sesame Oil
- 2 tbsp Extra virgin olive oil
- 2 tbsp ginger chopped
- 2 cups broccoli florets
- 1/4 cup Tamari
- 1 tbsp sesame seeds
- pinch red pepper flakes
- 4 scallions chopped
Instructions
- Cook Soba noodles according to package directions.
- (Soba noodles cook fast). Just before noodles are fully cooked, throw broccoli florets into water and blanch for 2 minutes.
- After two minutes, strain pasta and broccoli together, saving ¼ cup of cooking water.
- Immediately run cold water over pasta and broccoli to cease cooking.
- Mix oils, ginger, cooking water, and tamari together in a bowl.
- Pour mixture over pasta.
- Mix sesame seeds and pepper flakes over pasta, and garnish with scallions.
