Quinoa Burrito Bowl

Quinoa Burrito Bowl
This is a delicious tweak on a burrito, without the gluten, dairy, and only leaving deliciousness. Quinoa is a wonderful, high plant protein-based grain with a delicious consistency. For more information on this little gem, check out this awesome resource: https://www.jenreviews.com/quinoa/.
Ingredients
- 1 cup quinoa uncooked
- 1 tbsp coconut oil
- 2 Yellow Onions chopped
- 2 bell peppers diced
- 4 cups Baby Spinach Leaves
- 1 15 oz can Kidney Beans rinsed and drained
- 3 tbsp Cilantro Leaves
- 1 avocado pitted and sliced
- 1/2 cup favorite salsa
Instructions
- Cook quinoa according to the package directions (2:1 water: quinoa, so combine 2 cups water and 1 cup quinoa and bring to a boil.
- Heat coconut oil in a skillet. Add onion, and sautรฉ a few minutes until translucent.
- Add bell pepper and sautรฉ a few more minutes. Then add spinach and cook until spinach is wilted. Add in beans, mix well.
- Spoon quinoa into 4 bowls and top each with cooked vegetables. Top with avocado and salsa, and serve immediately.
