Cauliflower Rice Fried Rice

Cauliflower Rice Fried Rice
Ingredients
- 1 tbsp coconut oil
- 2 cloves garlic chopped
- 2 tsp ginger chopped
- 1/4 cup carrots diced
- 1/4 cup frozen or fresh peas
- 1/4 cup frozen or fresh corn kernels
- 3 cups cauliflower "rice" Purchase at TJs or spiralize a head of cauliflower
- 2 eggs mixed, raw
- 3 tbsp low sodium tamari
- 1 tbsp rice wine vinegar
- 1 tbsp Toasted Sesame Oil
Instructions
- Heat the coconut oil in a large skillet. Add in the garlic and ginger and cook for one minute on medium heat.
- Add in the carrots, peas, and corn, and cook for 2-3 minutes until tender, stirring regularly.
- Add int he cauliflower rice, and cook another 2-3 minutes.
- Make a large space in the middle of the pan by shoving the vegetables to the edges of the pan. Place the egg mixture in the middle and let it cook into a solid form. Once solid, chop up and mix throughout the vegetables.
- Mix in tamari, rice wine, and sesame oil, heat for another 2 minutes, and serve.
