Southwestern Cauliflower Rice

Southwestern Cauliflower Rice
Ingredients
- 1 tbsp coconut oil
- 1/2 cup onion diced
- 2 cloves garlic chopped
- 1 cup kale leaves chopped
- 3/4 cup canned black beans rinsed and drained
- 3 cups cauliflower "rice" Purchased at Trader Joe's or Spiralize a whole cauliflower
- 2 tbsp fresh lime juice
- 1 tsp taco seasoning
- 1/4 tsp sea salt
Instructions
- Heat the coconut oil in a large skillet. Add in the onion and the garlic, and cook on medium heat, stirring regularly, for 2-3 minutes until onion is translucent.
- Add in the kale and black beans, and cook another 2 minutes until the kale wilts.
- Add in the cauliflower rice and continue to cook and stir regularly for another 3-5 minutes until the cauliflower starts to get tender.
- Mix in the lime juice, taco seasoning, and salt, cook for another 2 minutes, and serve immediately.
