Banana Blueberry Quinoa Bake
Ingredients
- 1 cup quinoa uncooked
- 1 tsp coconut oil
- 1 Banana sliced into thin discs
- ½ cup blueberries (fresh or frozen)
- ¼ cup light coconut milk
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 tsp maple syrup
Instructions
- Preheat the oven to 400 degrees. Cook quinoa according to package directions.
- While the quinoa is cooking, heat the coconut oil in a skillet, and on medium low heat, add the bananas and cook 2 minutes. Next add the blueberries, cook another minute, and set cooked fruit on a plate lined with a paper towel to absorb any excess oil.
- In a small saucepan, combine the coconut milk, cinnamon, nutmeg, and maple syrup, and heat on a simmer for 5 minutes, not letting the milk burn.
- In an oven-proof dish, now poor the cooked quinoa, then the cooked fruit, and smother with the coconut milk mixture. Bake for 10 minutes, then broil for 2-3 additional minutes, and serve immediately.
