Tasty Spinach-Stuffed Trout

- 1/2 tsp sea salt
- 4 Whole Brook Trout de-boned, heads cut off.
- 8 Cherry Tomatoes sliced
- 1/4 cup Kalamata Olives pitted and sliced
- 1 cup Baby Spinach Leaves
- 1 tbsp Extra virgin olive oil
Preheat grill to medium heat. Open trouts to butterfly position so they can be stuffed. Sprinkle with salt.
Place the cherry tomato slices, olive slices, and then spinach leaves all on one side of the trout, and the fold over.
Brush the grill grates with the olive oil, and then place trout on the grill. Cook for approximately 10 minutes until fish starts to flake, and serve immediately.
