Tasty Spinach-Stuffed Trout

Ingredients
  

  • 1/2 tsp sea salt
  • 4 Whole Brook Trout de-boned, heads cut off.
  • 8 Cherry Tomatoes sliced
  • 1/4 cup Kalamata Olives pitted and sliced
  • 1 cup Baby Spinach Leaves
  • 1 tbsp Extra virgin olive oil

Instructions
 

  • Preheat grill to medium heat. Open trouts to butterfly position so they can be stuffed. Sprinkle with salt.
  • Place the cherry tomato slices, olive slices, and then spinach leaves all on one side of the trout, and the fold over.
  • Brush the grill grates with the olive oil, and then place trout on the grill. Cook for approximately 10 minutes until fish starts to flake, and serve immediately.
