No Bake Granola Bars

Ingredients
  

  • 1 cup quick cook oats
  • 3/4 cup crisp rice cereal
  • 1 Tbsp ground flaxseed
  • 1 Tbsp chia seeds
  • 3 Tbsp Grass-fed Butter
  • 1/3 cup coconut sugar
  • 2 Tbsp honey
  • 1/2 tsp vanilla extract
  • 1/4 cup extra dark chocolate chips plus some additional for topping
  • 1/4 cup shredded coconut optional

Instructions
 

  • Line a 9x9 baking pan with parchment paper with overhang on the sides
  • Mix together the oats, krisped rice, ground flax, and chia seeds in a bowl and set aside
  • In a large microwave safe bowl, add butter, sugar, and honey, and heat in microwave for 1.5 minutes. Remove from microwave and mix well
  • Place butter and sugar mixture back into microwave and heat for another minute
  • Mix microwaved mixture, and add in vanilla extract. Mix well again
  • Fold in the oat mixture and mix well, making sure mixture is well coated with the butter.
  • Fold in the chocolate chips and mix again
  • Transfer the mixture to the parchment-lined pan. Top with additional chocolate chips and shredded coconut.
  • Using a piece of wax paper, press the mixture down firmly so that it all sticks together well. This will help it from crumbling later when cut into bars.
  • Refrigerate for 1-2 hours, cut into small bars, and serve. Store in the refrigerator.
