Line a 9x9 baking pan with parchment paper with overhang on the sides
Mix together the oats, krisped rice, ground flax, and chia seeds in a bowl and set aside
In a large microwave safe bowl, add butter, sugar, and honey, and heat in microwave for 1.5 minutes. Remove from microwave and mix well
Place butter and sugar mixture back into microwave and heat for another minute
Mix microwaved mixture, and add in vanilla extract. Mix well again
Fold in the oat mixture and mix well, making sure mixture is well coated with the butter.
Fold in the chocolate chips and mix again
Transfer the mixture to the parchment-lined pan. Top with additional chocolate chips and shredded coconut.
Using a piece of wax paper, press the mixture down firmly so that it all sticks together well. This will help it from crumbling later when cut into bars.
Refrigerate for 1-2 hours, cut into small bars, and serve. Store in the refrigerator.
