Authentic Chinese Chicken and Broccoli

Ingredients
  

  • 1 tbsp coconut oil
  • 1 tbsp ginger chopped
  • 2 tsp garlic chopped
  • 1 lb white meat chicken tenders uncooked, cut in bite size chunks
  • 1/2 cup low sodium tamari *or soy sauce if not Gluten Free
  • 2 tbsp rice wine vinegar
  • 1 tbsp maple syrup
  • 3 cups broccoli florets blanched*
  • 1 tsp Corn Starch dissolved in 2 tbsp water
  • 1 tsp sesame seeds

Instructions
 

  • Heat the coconut oil in a skillet on medium heat, and add ginger and garlic. Cook for just 1 minute.
  • Add in the chicken and cook for 5-7 minutes, stirring regularly, until the chicken is completely cooked through.
  • While the chicken is cooking, mix together the tamari, rice wine, and maple syrup in a separate bowl.
  • Once the chicken is completely cooked, add in the broccoli and then pour in the tamari mixture. Mix well, and let simmer on low heat for 3 minutes.
  • Once the mixture has become hot, spoon in the corn starch and water mixture, and mix around well in the sauce. Continue to simmer for 3-5 more minutes until the sauce thickens.
  • Sprinkle with sesame seeds and serve immediately.
