Peanut Dipping Sauce
1tbspnatural creamy peanut butter
2tspagave syrup
2tbspReduced Sodium Tamari
1/2tspginger chopped finelychopped finely

Instructions
Cucumber Roll
Cut ends off of cucumber. Leaving skin on, then cut cucumber into 8 cylindrical pieces, each approximately 1.5 inches in length.
Using a paring knife, cut the seeds out of each piece of cucumber so you are left with a hole in the middle of each cucumber piece.
Slip a piece of tofu inside the cucumber hole. Then twist a basil leaf and slip in in beside the tofu.
Peanut Dipping Sauce
Combine the peanut butter, agave, tamari, and ginger in a bowl. Slowly add in the hot water, stirring the entire time, until the mixture becomes smooth and creamy.
Serve as a dipping sauce for the cucumber rolls and enjoy.
