Cucumber Tofu Rolls with Peanut Dipping Sauce
Ingredients
Cucumber Roll
- 1 English cucumber
- 8 pieces Tofu aproximately 2 inches in length and 1/4 inch in height
- 8 Large fresh basil leaves
Peanut Dipping Sauce
- 1 tbsp natural creamy peanut butter
- 2 tsp agave syrup
- 2 tbsp Reduced Sodium Tamari
- 1/2 tsp ginger chopped finely chopped finely
- 2 tbsp very hot water
Instructions
Cucumber Roll
- Cut ends off of cucumber. Leaving skin on, then cut cucumber into 8 cylindrical pieces, each approximately 1.5 inches in length.
- Using a paring knife, cut the seeds out of each piece of cucumber so you are left with a hole in the middle of each cucumber piece.
- Slip a piece of tofu inside the cucumber hole. Then twist a basil leaf and slip in in beside the tofu.
Peanut Dipping Sauce
- Combine the peanut butter, agave, tamari, and ginger in a bowl. Slowly add in the hot water, stirring the entire time, until the mixture becomes smooth and creamy.
- Serve as a dipping sauce for the cucumber rolls and enjoy.
