Shrimp Scampi Over Kale

Ingredients
  

  • 1 tbsp unrefined coconut oil
  • 2 tbsp dry white wine
  • 1 lb Extra Large Shrimp peeled and deveined (frozen or thawed is fine)
  • 4 cups kale coarsely chopped
  • 2 tbsp garlic 1/2 chopped, 1/2 sliced
  • 1 lemon cut into 4 wedges

Instructions
 

  • In a large skillet, heat the coconut oil until it melts. Once melted, add the wine in and let it steam off for about a minute.
  • Add in the shrimp, and cook for about 5 minutes, turning half way through, until the shrimp is completely pink.
  • Add in the kale and cook another 2-3 minutes until it is bright green and completely wilted.
  • Add in the garlic, cook another 1-2 minutes. Serve immediately with fresh lemon wedges.
