Garlicky Steamed Mussels

- 1 tbsp coconut oil
- 1/4 cup garlic chopped
- 1/2 cup Shallots chopped
- 1/4 cup white cooking wine
- 1/2 cup vegetable broth
- 1 can diced tomatoes
- 1 tbsp unsalted butter
- 2 lbs raw mussels cleaned well
- 1/4 cup mixed fresh herbs of your choice basil, oregano, parsley, sage, thyme
In a large Dutch oven or soup pot, heat coconut oil. Add garlic and shallots and cook for one minute.
Add in white cooking wine, vegetable broth, and diced tomatoes, bring to a boil. Once boiling, lower the light and let simmer for 5 minutes covered.
After 5 minutes, add in butter and let melt completely. Add in mussels, cover once again, and cook for 5-10 minutes until all of the mussels have opened.
Remove from heat once mussels are all open, mix in fresh herbs, and serve immediately. Can save left over sauce to use as a soup base.
