Vegetable Lomein

Ingredients
  

  • 8 oz Soba Noodles
  • 1 tbsp coconut oil
  • 2 tsp fresh ginger grated
  • 2 tsp garlic minced
  • 1/2 cup Sliced Mushrooms
  • 2 cups Bok Choy Leaves
  • 1/2 cup carrots sliced
  • 1/2 cup vegetable broth
  • 1/2 cup Pea Pods
  • 2 tbsp Soy Sauce
  • 2 tbsp Tamari
  • 1 tbsp sesame oil
  • 1 tsp red pepper flakes optional

Instructions
 

  • Cook Noodles and set aside.
  • Heat coconut oil in wok or deep skillet and cook ginger and garlic for 1 minute.
  • Then add mushrooms, bok choy and carrots, cooking for 3 minutes.
  • Add broth and pea pods, and simmer for 5 minutes until vegetables are more tender (but still a bit crisp).
  • Add noodles, tamari, sesame oil, and pepper flakes, and cook 2 more minutes while tossing.
  • Serve and enjoy.
