Parmesan Garlic Chicken Fingers

Ingredients
  

  • 1 cup Whole Wheat Bread Crumbs Can use crushed up Chex Rice cereal to make Gluten Free
  • 1/4 cup Parmesan cheese
  • 2 cloves garlic minced
  • 2 tbsp Extra virgin olive oil
  • 1/2 tsp salt
  • pepper to taste
  • 1 lb Thin Boneless Chicken Cutlets
  • 1/4 cup Fresh Basil chopped
  • 1/4 cup Plain Low-fat Yogurt

Instructions
 

  • Heat oven to 425 degrees.
  • Combine bread crumbs, cheese, garlic, oil, salt, and pepper in a bowl.
  • Dry cutlets with paper towels and put into pyrex baking dish.
  • Combine basil and yogurt and spread over chicken evenly.
  • Sprinkle bread crumb mixture on top and press lightly.
  • Bake until bread crumbs start to turn golden brown, 10-12 minutes. Use a meat thermometer to test doneness. Fully cooked when middle of cutlet reads 160 degrees.
