Parmesan Garlic Chicken Fingers

- 1 cup Whole Wheat Bread Crumbs Can use crushed up Chex Rice cereal to make Gluten Free
- 1/4 cup Parmesan cheese
- 2 cloves garlic minced
- 2 tbsp Extra virgin olive oil
- 1/2 tsp salt
- pepper to taste
- 1 lb Thin Boneless Chicken Cutlets
- 1/4 cup Fresh Basil chopped
- 1/4 cup Plain Low-fat Yogurt
Heat oven to 425 degrees.
Combine bread crumbs, cheese, garlic, oil, salt, and pepper in a bowl.
Dry cutlets with paper towels and put into pyrex baking dish.
Combine basil and yogurt and spread over chicken evenly.
Sprinkle bread crumb mixture on top and press lightly.
Bake until bread crumbs start to turn golden brown, 10-12 minutes. Use a meat thermometer to test doneness. Fully cooked when middle of cutlet reads 160 degrees.
