Oregano Spiced Shrimp In Tomato Sauce

Ingredients
  

  • 1 tbsp coconut oil
  • 2 cloves garlic
  • 3 Shallots
  • 6 White Mushrooms chopped (optional)
  • 1/2 cup celery sliced
  • 2 cups Dark Leafy Greens Kale, spinach, collard greens, or broccoli rabe
  • 1 lbs large shrimp deveined and peeled
  • 1/2 cup dry white wine
  • 2 cups tomato sauce
  • 5 sprigs fresh oregano chopped
  • 1/4 cup Kalamata Olives pitted and sliced
  • salt and pepper to taste

Instructions
 

  • Heat oil in large skillet. Add garlic and cook one minute.
  • Then add celery, shallots, mushrooms, and greens and cook about 8 minutes, until tender.
  • Add the shrimp and cook a few more minutes until shrimp turn pinkish-orange.
  • Season with salt & pepper, then add tomato sauce, wine, olives, and oregano, and cook another few minutes until hot.
  • Serve over pasta or zucchini linguine
