Holiday Roasted Potatoes

Ingredients
  

  • 8 Red Potatoes small red potatoes, skin on, halved and cut in 1/4 in slices
  • 1 yellow onion diced
  • 3 tbsp Extra virgin olive oil
  • 2 tbsp fresh oregano chopped, or 1 tbsp dried oregano
  • 1 tsp sea salt

Instructions
 

  • Preheat oven to 450 degrees. Place potatoes, onions, and orgeano in a large ti or large pyrex baking dish.
  • Mix in olive oil and salt, and coat well.
  • Bake for 90 minutes, stirring occasionally. The longer you cook the potatoes, the crispier they will be. Serve and enjoy.
