Garlicky Bok Choy

Ingredients
  

  • 1 tbsp coconut oil
  • 2 tbsp garlic chopped
  • 6 cups Bok Choy washed and chopped, about 1 bunch
  • salt and pepper to taste

Instructions
 

  • Heat coconut oil in a skillet, and add 3/4 of the garlic. Let is cook for 1 minute.
  • Add in the bok choy and cook on medium heat, mixing regularly, until the bok choy starts to wilt and the white parts start to soften, about 10 minutes.
  • Add the remaining garlic, salt and pepper, and cook for another 2 minutes. Serve immediately
