Balsamic Raspberry Arugula Salad

Ingredients
  

Salad

  • 2 cups Arugula Leaves
  • 1 cup cucumber sliced, skin on
  • 1/2 cup canned chick peas rinsed and drained
  • 1/2 cup Black Olives pitted and cut in half
  • 1/2 cup fresh raspberries

Balsamic Dressing

  • 1/4 cup balsamic vinegar
  • 1/2 tsp Dijon mustard
  • 1 tsp maple syrup
  • 2 tbsp water
  • 2 tbsp Extra virgin olive oil

Instructions
 

Salad

  • Place arugula leaves in a large bowl. Top with remaining salad ingredients

Balsamic Dressing

  • Place all dressing ingredients in a container and cover. Shake well.
  • Dress salad when you are ready to serve it.
