Dairy Free Pesto, Mussels, and Clams Pizza

Ingredients
  

  • 1 thin pizza crust pre-made, ideally whole wheat
  • 1 tbsp coconut oil
  • 2 tbsp garlic chopped
  • 1/4 cup Shallots diced
  • 1/4 cup dry white wine
  • 1 lb mussels washed
  • 1 dozen little neck clams washed
  • 2 tbsp Pesto
  • 1 tbsp butter

Instructions
 

  • Preheat the oven to 450 degrees. Heat pizza crust until crispy, about 10 minutes.
  • Heat the coconut oil in a large sauce pan or Dutch oven. Add in the garlic and shallots and cook for 2 minutes on medium heat.
  • Add in the white wine, let the heat come off for a minute, and then add in the mussels and clams. Cover and simmer for about 10 minutes until all of the shell fish opens. As soon as the shell fish is all open, remove from heat, and add the butter. Cover again for 2-3 minutes so the butter can melt, and mix it around.
  • Hopefully your pizza crust and shell fish should be read around the same time. Spread the pesto all around the heated pizza crust as the sauce for the pizza. Then top with the mussels and clams, also spooning some of the cooking liquid on top of the pizza crust. Serve immediately.
