Rosemary Garlic Crusted Pork Roast

Ingredients
  

  • 2 lb boneless pork loin roast
  • 1/2 tsp sea salt
  • 1 tbsp avocado oil
  • 2 tbsp garlic chopped
  • 2 tbsp fresh rosemary chopped
  • 1/2 tsp orange zest
  • 2 tbsp dry white wine

Instructions
 

  • Leave pork at room temperature for 30 minutes prior to cooking and sprinkle with salt. Preheat oven to 350 degrees.
  • Combine avocado oil, garlic, rosemary, orange zest, and white wine together.
  • Place the pork on the rack in a roasting pan, and rub the marinade mixture all around it, letting it drip into the pan. Also place a 1/4 cup water in the bottom of the pan.
  • Bake for approximately 1 hour until the pork measures 145-150 degrees with a meat thermometer. Remove from oven and tent with foil for 10-15 minutes.
  • Slice and pour the drippings from the pan over the pork. Serve immediately.
