Heat the coconut oil on medium heat in a skillet. Add in the peas, and cook for 3-5 minutes until they are bright green and just starting to become tender. Do not overcook to make them too soft.
Turn the heat off and mix the peas with the goat cheese and the mint in the skillet. Once combined, mix in the lemon juice, and season with salt and pepper. Serve immediately or chill and serve later.
