Spring Peas With Mint, Lemon, & Goat Cheese

Ingredients
  

  • 1 tsp coconut oil
  • 2 cups Fresh Peas
  • 2 tbsp goat cheese
  • 2 tbsp fresh mint chopped
  • 1 tbsp lemon juice
  • salt and pepper to taste

Instructions
 

  • Heat the coconut oil on medium heat in a skillet. Add in the peas, and cook for 3-5 minutes until they are bright green and just starting to become tender. Do not overcook to make them too soft.
  • Turn the heat off and mix the peas with the goat cheese and the mint in the skillet. Once combined, mix in the lemon juice, and season with salt and pepper. Serve immediately or chill and serve later.
