Cauliflower Rice Fried Rice

Ingredients
  

  • 1 tbsp coconut oil
  • 2 cloves garlic chopped
  • 2 tsp ginger chopped
  • 1/4 cup carrots diced
  • 1/4 cup frozen or fresh peas
  • 1/4 cup frozen or fresh corn kernels
  • 3 cups cauliflower "rice" Purchase at TJs or spiralize a head of cauliflower
  • 2 eggs mixed, raw
  • 3 tbsp low sodium tamari
  • 1 tbsp rice wine vinegar
  • 1 tbsp Toasted Sesame Oil

Instructions
 

  • Heat the coconut oil in a large skillet. Add in the garlic and ginger and cook for one minute on medium heat.
  • Add in the carrots, peas, and corn, and cook for 2-3 minutes until tender, stirring regularly.
  • Add int he cauliflower rice, and cook another 2-3 minutes.
  • Make a large space in the middle of the pan by shoving the vegetables to the edges of the pan. Place the egg mixture in the middle and let it cook into a solid form. Once solid, chop up and mix throughout the vegetables.
  • Mix in tamari, rice wine, and sesame oil, heat for another 2 minutes, and serve.
