3cupscauliflower "rice"Purchase at TJs or spiralize a head of cauliflower
2eggsmixed, raw
3tbsplow sodium tamari
1tbsprice wine vinegar
1tbspToasted Sesame Oil
Instructions
Heat the coconut oil in a large skillet. Add in the garlic and ginger and cook for one minute on medium heat.
Add in the carrots, peas, and corn, and cook for 2-3 minutes until tender, stirring regularly.
Add int he cauliflower rice, and cook another 2-3 minutes.
Make a large space in the middle of the pan by shoving the vegetables to the edges of the pan. Place the egg mixture in the middle and let it cook into a solid form. Once solid, chop up and mix throughout the vegetables.
Mix in tamari, rice wine, and sesame oil, heat for another 2 minutes, and serve.
