Dairy Free Creamy Cucumber Dill Soup

Ingredients
  

  • 1/2 cup Raw Cashews soaked in 1 cup water at least 4 hours
  • 1/2 English cucumber peeled and sliced
  • 1/4 cup fresh dill or 2 tbsp dried, but fresh preferable
  • 2 tbsp Fresh lemon juice
  • 1/4 tsp sea salt

Instructions
 

  • Place cashews and water in a blend and blend until creamy.
  • Add in the remaining ingredients and blend again. Chill for 30 minutes, garnish with olive oil and cucumer, and serve.
