seedless watermelon
skin off, diced

mint leaves
chopped

Feta
crumbled, ideally from goat or sheep's milk

Extra virgin olive oil

Fresh lemon juice

sea salt
Instructions
Place the arugula in a large bowl, and top with watermelon, mint and feta.
Combine oil, lemon juice, and salt, and dress the salad. Serve chilled.
