Watermelon, Feta, Mint Salad

Ingredients
  

  • 2 cups Arugula Leaves washed and dried
  • 1 cup seedless watermelon skin off, diced
  • 2 tbsp mint leaves chopped
  • 2 tbsp Feta crumbled, ideally from goat or sheep's milk
  • 3 tbsp Extra virgin olive oil
  • 1/4 cup Fresh lemon juice
  • 1/4 tsp sea salt

Instructions
 

  • Place the arugula in a large bowl, and top with watermelon, mint and feta.
  • Combine oil, lemon juice, and salt, and dress the salad. Serve chilled.
