Rosemary Roasted Sweet Potatoes

- 2 sweet potatoes or yams medium sized
- 2 tbsp Extra virgin olive oil
- 2 tbsp fresh rosemary chopped or 1 tbsp dried rosemary chopped
- salt and pepper to taste
Preheat oven to 425 degrees.
Keeping the skin on the sweet potatoes, cut into quarters, lengthwise, and then slice the quarters into 1/2 inch thick slices.
Place the cut potatoes in a shallow glass baking dish or a shallow aluminum baking pan, and toss well with olive oil, rosemary, and salt and pepper.
Place in the oven and cook for about 30 minutes, mixing every 10 minutes.
Potatoes will soften when done. Serve immediately.
