Tasty Turkey Meatloaf

Ingredients
  

  • 1 tsp coconut oil
  • 1 onion sliced
  • 2 tsp garlic chopped
  • 1/2 cup white button mushrooms chopped
  • 1 lb ground turkey all white meat
  • 1/2 cup oats
  • 1 egg white
  • 1 tsp Worcestershire
  • 1 tbsp catsup
  • salt and pepper to taste
  • 1/2 cup tomato sauce

Instructions
 

  • Preheat the oven to 425 degrees.
  • Heat the oil in a skillet and add the onions and garlic, cooking until onion is translucent. Then add mushrooms and cook another 2-3 minutes, until vegetables are cooked.
  • Place the turkey meat in a large bowl. Take the oats and hand grind them by rubbing them through your hands and into the meat.
  • Add the cooked vegetables, egg white, Worcestershire, and catsup to the meat and mix very well. Also season with some salt and pepper.
  • Take the meat and place it on a baking sheet. Start to form a loaf shape using your hands. Once formed into a load, spoon the tomato sauce on top of the loaf.
  • Place baking sheet in the oven and bake for 45-50 minutes, until the internal temperature of meat reads 170 degrees with a meat thermometer. Serve immediately.
