Minty Cucumber Radish Salad

Ingredients
  

  • 2 large seedless cucumbers
  • 1 cup radish washed and sliced thin
  • 2 tbsp rice wine vinegar
  • 1 tbsp lemon juice
  • 2 tsp agave syrup
  • 2 tbsp fresh mint chopped
  • 1/2 tsp salt

Instructions
 

  • Peel stripes on cucumber and then slice cucumber thinly. In a separate bowl, combine vinegar, lemon juice, and agave, and mix well. Pour over cucumber radish mixture and toss. Mix in mint and salt. Serve or refrigerate and serve later.
