Lime & Chili Cucumber and Daikon Wedges

Ingredients
  

  • 1 seedless cucumber
  • 2 pieces daikon* (about 3 inches in length each)
  • 1/4 cup fresh lime juice
  • 2 tsp chili powder
  • 1/2 tsp red chili pepper flakes optional
  • 1/2 tsp sea salt

Instructions
 

  • Cut the ends off of the cucumbers, but leave the skin on. Cut into 3-4 inch pieces, and then cut each of those lengthwise into quarters so they look like wedges/spears.
  • Peel the daikon and cut into the same shape as the cucumber pieces.

  • Place both vegetables into a large bowl and toss with the lime juice, chili powder, chili flakes, and salt and serve.
  • *Daikon is a type of Japanese radish. The skin is NOT edible, so it must be peeled. **Can be made in advance and refrigerated
