Grilled Pineapple Pork Chops

Ingredients
  

  • 4 Center Cut Pork Chops bone in
  • 1/2 tsp fresh rosemary chopped
  • 1/4 cup Apple Cider
  • 2 tbsp Low Sodium Soy Sauce
  • 1 tsp garlic chopped
  • 2 tsp Fresh lemon juice
  • 8 circular slices Fresh Pineapple about 1/4 inch thick
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp fresh mint chopped
  • salt and pepper to taste

Instructions
 

  • Combine cider, soy sauce, garlic, and lemon juice.
  • Place pork chops in this marinade and let sit 15 minutes.
  • In the interim, brush pineapple slices with olive oil and then sprinkle with chopped mint.
  • Place pineapple slices on top rack of barbecue and let cook on medium heat about 20-25 minutes, turning half way through.
  • Remove pork chops, sprinkle with rosemary, salt, and pepper, and place on grill, cooking 10-12 minutes, again, also turning half way through cooking time.
  • Place 2 pineapple slices on top of each pork chop and serve.
