Heart-Healthy Arugula Salad

Ingredients
  

  • 3 cups arugula
  • 1 cup Radicchio
  • 1 cup Endive
  • 1/2 cup cucumber skin on, sliced in 1/4 inch discs
  • 1/2 cup Radishes sliced thin
  • 1/2 cup beets pre-cooked vacuum seeled kind, sliced
  • 1/2 cup Canned Chickpeas rinsed and drained
  • 1/4 cup Pitted Black Olives sliced
  • 1/4 cup Walnuts pieces
  • 2 tbsp Parmesan cheese shredded
  • 3 tbsp Fresh lemon juice
  • 3 tbsp Extra virgin olive oil
  • 1/2 tsp sea salt

Instructions
 

  • Toss arugula, radicchio, and endive leaves together.
  • Top with cucumber, radishes, beets, chickpeas, and olives.
  • Then top with walnuts and cheese.
  • Mix in lemon juice, olive oil, and salt, and serve.
