Holiday Roasted Potatoes

- 8 Red Potatoes small red potatoes, skin on, halved and cut in 1/4 in slices
- 1 yellow onion diced
- 3 tbsp Extra virgin olive oil
- 2 tbsp fresh oregano chopped, or 1 tbsp dried oregano
- 1 tsp sea salt
Preheat oven to 450 degrees. Place potatoes, onions, and orgeano in a large ti or large pyrex baking dish.
Mix in olive oil and salt, and coat well.
Bake for 90 minutes, stirring occasionally. The longer you cook the potatoes, the crispier they will be. Serve and enjoy.
