Roasted Grape Tomatoes

Ingredients
  

  • 2 cups grape tomatoes rinsed and dried
  • 1 tbsp Extra Firm Tofu
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 425 degrees.
  • Place tomatoes on a baking sheet. Drizzle olive oil, and using your hands, mix into the tomatoes so they are well coated. Season with salt and pepper.
  • Place baking sheet in the oven and cook for 30 minutes, turning half way through cooking time.
  • Remove from oven and allow to cool. Eat plain, mixed in a salad, on a sandwich, or mixed into pasta.
