Roasted Grape Tomatoes

- 2 cups grape tomatoes rinsed and dried
- 1 tbsp Extra Firm Tofu
- salt and pepper to taste
Preheat oven to 425 degrees.
Place tomatoes on a baking sheet. Drizzle olive oil, and using your hands, mix into the tomatoes so they are well coated. Season with salt and pepper.
Place baking sheet in the oven and cook for 30 minutes, turning half way through cooking time.
Remove from oven and allow to cool. Eat plain, mixed in a salad, on a sandwich, or mixed into pasta.
