Rosemary Roasted Sweet Potatoes

Ingredients
  

  • 2 sweet potatoes or yams medium sized
  • 2 tbsp Extra virgin olive oil
  • 1 tbsp fresh rosemary chopped or 1 tbsp dried rosemary chopped
  • 1/2 tsp salt and pepper to taste

Instructions
 

  • Preheat oven to 425 degrees.
  • Keeping the skin on the sweet potatoes, cut into quarters, lengthwise, and then slice the quarters into 1/2 inch thick slices.
  • Place the cut potatoes in a shallow glass baking dish or a shallow aluminum baking pan, and toss well with olive oil, rosemary, and salt and pepper.
  • Place in the oven and cook for about 30 minutes, mixing every 10 minutes.
  • Potatoes will soften when done. Serve immediately.
