Southwestern Cauliflower Rice

Ingredients
  

  • 1 tbsp coconut oil
  • 1/2 cup onion diced
  • 2 cloves garlic chopped
  • 1 cup kale leaves chopped
  • 3/4 cup canned black beans rinsed and drained
  • 3 cups cauliflower "rice" Purchased at Trader Joe's or Spiralize a whole cauliflower
  • 2 tbsp fresh lime juice
  • 1 tsp taco seasoning
  • 1/4 tsp sea salt

Instructions
 

  • Heat the coconut oil in a large skillet. Add in the onion and the garlic, and cook on medium heat, stirring regularly, for 2-3 minutes until onion is translucent.
  • Add in the kale and black beans, and cook another 2 minutes until the kale wilts.
  • Add in the cauliflower rice and continue to cook and stir regularly for another 3-5 minutes until the cauliflower starts to get tender.
  • Mix in the lime juice, taco seasoning, and salt, cook for another 2 minutes, and serve immediately.
