Crunchy Kale Apple Salad

Ingredients
  

  • 4 cups kale washed and chopped
  • 1 Apple skin on, diced
  • 1/2 cup jicama juliene or diced (can substitute with radish)
  • 1 cup cucumber skin on, quartered and sliced
  • 1/4 cup slivered almonds
  • 3 tbsp Extra virgin olive oil
  • 2 tbsp Fresh lemon juice
  • salt and pepper to taste

Instructions
 

  • Combine all salad ingredients together. Top with oil, lemon juice, salt, and pepper, and mix well.
