Turkey Tacos with Honey Lime Kale Slaw

Ingredients
  

  • 1 tsp coconut oil
  • 1/2 large onion diced
  • 1/2 lb ground turkey breast
  • 2 Tbsp taco seasoning favorite pre-packaged brand
  • 2 cups green cabbage chopped coarsely
  • 1 cup kale chopped coarsely
  • 1/4 cup Cilantro Leaves chopped
  • 2 Tbsp lime juice
  • 1/2 tsp sea salt
  • 1 tsp honey
  • 3 Tbsp Extra virgin olive oil
  • 4 yellow corn hard taco shells
  • 1/4 cup shredded cheddar cheese optional
  • 1 avocado sliced and peeled

Instructions
 

  • Heat the coconut oil in a skillet on medium heat. Add in the onion and cook 3-4 minutes until translucent.
  • Add in the ground turkey and the taco seasoning, and cook, stirring the meat frequently until it is completely cooked through.
  • Mix together the cabbage, kale, and cilantro in a medium bowl.
  • In a smaller bowl, mix together the lime juice, salt, honey, and olive oil. Stir vigorously to make a dressing, and pour over the vegetable mixture. Toss dressing well into slaw.
  • Place meat and slaw inside a taco shell. Garnish with cheese and avocado and serve.
