Gluten Free Cauliflower Lentil Burger

Servings 4 burgers

Ingredients
  

  • 1.5 cups cauliflower florets
  • 1 Tbsp Extra virgin olive oil
  • 1 cup cooked brown lentils can use canned
  • 3 Tbsp old fashioned oats crushed in a blender or between your hands
  • 1 tsp cumin
  • 1 tsp Tumeric
  • 1 tsp chili powder
  • 1/4 tsp sea salt
  • 1 Tbsp ground flax
  • 1 Tbsp coconut oil

Instructions
 

  • Preheat oven to 450 degrees.
  • Coat cauliflower with olive oil and place on baking sheet. Bake for 15 minutes or until golden.
  • Chop baked cauliflower, and combine in a bowl with lentils. Add in oats, spices and ground flax, and mix well.
  • Form 4 patties with the mixture.
  • Heat coconut oil in a skillet on medium heat. Add in patties, cooking 5 minutes per side or until golden. Serve inside a lettuce leaf "bun" with your favorite toppings.
