Watermelon, Feta, Mint Salad
Ingredients
- 2 cups Arugula Leaves washed and dried
- 1 cup seedless watermelon skin off, diced
- 2 tbsp mint leaves chopped
- 2 tbsp Feta crumbled, ideally from goat or sheep's milk
- 3 tbsp Extra virgin olive oil
- 1/4 cup Fresh lemon juice
- 1/4 tsp sea salt
Instructions
- Place the arugula in a large bowl, and top with watermelon, mint and feta.
- Combine oil, lemon juice, and salt, and dress the salad. Serve chilled.
