Vegetarian Stuffed Mushrooms

Vegetarian Stuffed Mushrooms
Ingredients
- 1 tbsp coconut oil
- 1 tsp garlic chopped
- 1/2 cup onion chopped
- 1 cup broccoli florets chopped
- 12 Mushroom Stems chopped
- 1 tbsp oats ground
- 1 tbsp Rice Chex Cereal ground
- 2 tbsp Feta Cheese crumbled
- 12 Large White Mushrooms destemmed, but save stems
Instructions
- Preheat oven to 400 degrees. Add coconut oil to a large skillet and heat.
- Add garlic and onion to skillet and cook for 2 minutes until onion starts to become translucent.
- Next add broccoli and chopped mushroom stems and cook for about 5 minutes, stirring regularly, until vegetables are just starting to get tender.
- Remove from heat, and add ground up oats, Rice Chex, and feta cheese. Mix well.
- Place de-stemmed mushrooms on a baking sheet. Stuff the mixture into each mushroom until it's almost overflowing, and bake for 15-20 minutes until mushrooms are tender and filling starts to crisp. Serve immediately.
