The Best Gluten Free Chicken Fingers (and healthy too!)
Ingredients
- 1/2 cup Rice Chex Cereal
- 1 lb boneless chicken breast tenders
- 2 Eggs beaten
- 1/2 tsp sea salt
- coconut oil spray
Instructions
- Preheat oven to 375 degrees. Place the cereal in a Ziploc bag, and using a can of food, start to roll over it until the rice chex are crushed finely. Empty them out onto a plate.
- Dip the chicken tenders into the beaten egg, and then dip both sides into the crushed rice chex.
- Spray a baking sheet with coconut oil spray, and place the coated chicken tenders on it. Then spray the tops of the chicken tenders with the coconut oil as well. Bake for approximately 25-30 minutes until the chicken tenders just start to become golden. Serve immediately.
