Spaghetti Squash Sort of Parmesan
Ingredients
- 1 Spaghetti Squash Cut in half lengthwise, seeds removed
- 1 15oz can diced tomatoes
- 1 cup button mushrooms sliced thin
- 2 tsp Dried Basil
- 1/2 tsp sea salt
- 2 tbsp Parmesan cheese shredded
Instructions
- Preheat oven to 425 degrees. Bake Spaghetti squash halves, skin side up, in a glass baking dish for approximately 30 minutes or until skin softens.
- Take squash out of skin and place in the same glass baking dish. Flatten it out to spread into one layer around the entire baking dish.
- Spread can of tomatoes on top of squash. Then sprinkle basil and salt on top, and next top with mushrooms, spread evenly across the tomatoes. Lower oven to 375 degrees and bake for 20 minutes, until tomatoes are bubbling.
- Sprinkle cheese across the top of the mushrooms, bake for another 5 minutes until cheese melts, and serve immediately.
