Sausage Sauce Over Zucchini Linguine

Ingredients
  

  • 2 tbsp coconut oil
  • 1 onion diced
  • 1 tbsp garlic minced
  • 4 Chicken Sausage cut into 1/2 inch discs
  • 1 28 oz Canned crushed tomatoes
  • 1 tsp Dried Basil
  • 3 zucchini Spiralized blade C* or peeled into linguine strips
  • salt and pepper to taste

Instructions
 

  • Heat one tablespoon of the coconut oil in a medium sauce pan on medium heat. Add in the onion and garlic and cook for 2 minutes.
  • Next add in the sausage and cook for approximately 5 minutes, stirring regularly, until the sausage is partially cooked.
  • Add in the crushed tomatoes and dried basil, and bring to a slow boil. Once boiling, lower the heat to a simmer, cover, and let it cook for 15 minutes.
  • While the sauce is simmering, heat the second tablespoon of coconut oil in a large skillet on medium heat. Add in the zucchini linguine and sauté for just 2-3 minutes. Do not over cook. Once done, set aside. Serve the sausage sauce over the zucchini linguine.
