Sausage Sauce Over Zucchini Linguine
Ingredients
- 2 tbsp coconut oil
- 1 onion diced
- 1 tbsp garlic minced
- 4 Chicken Sausage cut into 1/2 inch discs
- 1 28 oz Canned crushed tomatoes
- 1 tsp Dried Basil
- 3 zucchini Spiralized blade C* or peeled into linguine strips
- salt and pepper to taste
Instructions
- Heat one tablespoon of the coconut oil in a medium sauce pan on medium heat. Add in the onion and garlic and cook for 2 minutes.
- Next add in the sausage and cook for approximately 5 minutes, stirring regularly, until the sausage is partially cooked.
- Add in the crushed tomatoes and dried basil, and bring to a slow boil. Once boiling, lower the heat to a simmer, cover, and let it cook for 15 minutes.
- While the sauce is simmering, heat the second tablespoon of coconut oil in a large skillet on medium heat. Add in the zucchini linguine and sauté for just 2-3 minutes. Do not over cook. Once done, set aside. Serve the sausage sauce over the zucchini linguine.
