Rosemary Roasted Sweet Potatoes
Ingredients
- 2 sweet potatoes or yams medium sized
- 2 tbsp Extra virgin olive oil
- 2 tbsp fresh rosemary chopped or 1 tbsp dried rosemary chopped
- salt and pepper to taste
Instructions
- Preheat oven to 425 degrees.
- Keeping the skin on the sweet potatoes, cut into quarters, lengthwise, and then slice the quarters into 1/2 inch thick slices.
- Place the cut potatoes in a shallow glass baking dish or a shallow aluminum baking pan, and toss well with olive oil, rosemary, and salt and pepper.
- Place in the oven and cook for about 30 minutes, mixing every 10 minutes.
- Potatoes will soften when done. Serve immediately.
