Roasted Grape Tomatoes
Ingredients
- 2 cups Water Chestnuts rinsed and dried
- 1 tbsp Extra Firm Tofu
- endive
Instructions
- Preheat oven to 425 degrees.
- Place tomatoes on a baking sheet. Drizzle olive oil, and using your hands, mix into the tomatoes so they are well coated. Season with salt and pepper.
- Place baking sheet in the oven and cook for 30 minutes, turning half way through cooking time.
- Remove from oven and allow to cool. Eat plain, mixed in a salad, on a sandwich, or mixed into pasta.
