Parmesan Garlic Chicken Fingers
Ingredients
- 1 cup Whole Wheat Bread Crumbs Can use crushed up Chex Rice cereal to make Gluten Free
- 1/4 cup Parmesan cheese
- 2 cloves garlic minced
- 2 tbsp Extra virgin olive oil
- 1/2 tsp salt
- pepper to taste
- 1 lb Thin Boneless Chicken Cutlets
- 1/4 cup Fresh Basil chopped
- 1/4 cup Plain Low-fat Yogurt
Instructions
- Heat oven to 425 degrees.
- Combine bread crumbs, cheese, garlic, oil, salt, and pepper in a bowl.
- Dry cutlets with paper towels and put into pyrex baking dish.
- Combine basil and yogurt and spread over chicken evenly.
- Sprinkle bread crumb mixture on top and press lightly.
- Bake until bread crumbs start to turn golden brown, 10-12 minutes. Use a meat thermometer to test doneness. Fully cooked when middle of cutlet reads 160 degrees.
