Lime & Chili Cucumber and Daikon Wedges

Lime & Chili Cucumber and Daikon Wedges
Ingredients
- 1 seedless cucumber
- 2 pieces daikon* (about 3 inches in length each)
- 1/4 cup fresh lime juice
- 2 tsp chili powder
- 1/2 tsp red chili pepper flakes optional
- 1/2 tsp sea salt
Instructions
- Cut the ends off of the cucumbers, but leave the skin on. Cut into 3-4 inch pieces, and then cut each of those lengthwise into quarters so they look like wedges/spears.
- Peel the daikon and cut into the same shape as the cucumber pieces.
- Place both vegetables into a large bowl and toss with the lime juice, chili powder, chili flakes, and salt and serve.
- *Daikon is a type of Japanese radish. The skin is NOT edible, so it must be peeled. **Can be made in advance and refrigerated
