Kale Salad with Creamy Garlic Cashew Dressing
Ingredients
Salad
- 4 cups kale chopped
- 1 Apple juliened
- 1/2 cup Radishes juliened
Dressing
- 1 cup Raw Cashews
- 3 tbsp Fresh lemon juice
- 1 tbsp fresh parsley
- 1 tbsp Tamari low sodium
- 2 tbsp Raw Apple Cider Vinegar
- 2 tbsp Extra virgin olive oil
- 1/4 cup water
Instructions
Salad
- Combine the kale, apple, and radishes together in a large bowl. Then toss with dressing and serve.
Dressing
- Combine all dressing ingredients in a blender, and blend on the highest speed until it has a smooth and creamy consistency. Can add a little more water if you want a thinner consistency.
